Appearance: Rum has a light amber color with a subtle tint that suggests the influence of American Ex-Bourbon casks and further maturation in Ireland.
Aroma: In the foreground are sweet fruity and caramel-like notes, complemented by vanilla, a hint of spices, and subtle notes of grain and wood from Irish casks.
Taste: At the first sip, we notice a rounded sweetness and a smooth flavor of caramel and vanilla. Dry woody notes, a mild spiciness, and a light texture follow, reminiscent of the influence of the preceding Irish single malt.
Finish: The finish is warm, sweet-woody, and well balanced; a moderate alcohol sensation and a pleasant length show that the additional maturation in Irish casks softened some agricole characteristics and increased the “whisky-like” smoothness.
