Appearance: Very dark mahogany color – shaded, almost the density of port or fine old sherry. The texture is highly viscous; “legs” remain in the glass.
Aroma: Strong sherry aroma with sweet and spicy layers, dry dates, caramel, dark chocolate, black fruit, and toasty oak notes, tobacco, and dry smoke. Gently salty in their specific Highland Park style.
Palate: Full-bodied with a rich sherry profile – dry fruit (dates, raisins), molasses, sweet spice, and black ashy wort. A clearly high-intensity and structured profile – powerful and a little raw, yet harmonious. Many connoisseurs also describe notes of tobacco, dry smoke, and heavy traces of spiciness.
Finish: Exceptionally long, tannic and drying finish: one-note sherry notes meld with wood, dry smoke, and pepperiness—lingering long after the sip.
