Vinification
- Grape variety: 100% Chardonnay (Blanc de Blancs) from the Les Roches parcel, Avize Grand Cru.
- Manual harvest with fractional pressing to retain only the purest juice.
- Fermentation: part in stainless steel tanks, part in oak barrels.
- Aging: 39 months on lees (sur lattes) before disgorgement.
- Alcohol: 12.5% ABV.
